Mixed Dal (Lentil) Recipe

Ingredients:
- 2 tbsp clarified butter (ghee) or any oil
- 1 cup mixed lentil
- 2-3 dry red chilies (whole)
- 1/2 tsp cumin seeds
- 1/4 tsp asafoetida
- 1 medium onion - sliced
- 1 tsp ginger paste
- Red chili to taste
- 1 tsp turmeric powder
- Salt to taste
- Cilantro leaves chopped

Process:
In an instant pot/cooker add ghee oil, mixed lentils, turmeric powder, 3 1/2 cups of water, then cover for 3-4 whistles. Turn off the flame and let it cool.

 


For Tempering:
In a pan / kadai, add 1 tbsp ghee oil, dry red chilies, cumin seeds,
asafoetida and let it splutter or until lite brown. Add onion, ginger and sauté until translucent. Now add red Chile power and the cooked lentils. Boil it for 5 to 7 minutes on medium heat. Turn off the flame and garnish with chopped cilantro. Serve hot with stream rice / naan / roti

Protein Veg Seekh Kebabs

Ingredients:

For Seekh Kebab

  • 2.5 cups soya granules

  • 2 grated carrot

  • 1 onion finely chopped 

  • Chopped cilantro 

  • 1 tbsp cumin powder

  • 1 tbsp garam masala

  • 4 tbsp soy sauce

  • 4 tbsp chickpea flour

  • Red Chilli as per taste

  • Salt as per taste

 

For the dressing 

  • Cilantro chutney

  • Chaat masala

  • Greek yogurt

  • Mix 4 tbsp of cilantro chutney, 1 tbsp chaat masala and 4 tbsp of greek yogurt in a bowl.

Process:

Boil soya granules in 5 cups of water for 4 minutes - let it cool and squeeze the excess water. To a bowl add boiled and squeezed soya granules, add grated carrots, chopped onion, cilantro, coriander powder, cumin powder, garam masala, soy sauce, red chilli powder, salt mix it well. Now add chickpea flour. Give it a good mix. Apply water on both palms and form kebabs as shown in the picture. Take a pan or skillet, add some oil once oil gets hot, place prepared kebabs and roast until nice golden brown in color and cooked well from both the sides. 

You can serve these seekh kebab with the dip as such OR take Indian bread/tortilla and heat it up on a skillet on both sides. Take a plate, spread the dressing on the tortilla, add cooked seekh kebab, sprinkle some chopped cilantro, chaat masala, wrap it up and enjoy!
